Ashley Moore
I, originally come from New Zealand, and came to the United Kingdom in 1998 to work in London’s West End. Prior to that I learnt my trade working in Bars and Restaurants in Wellington, New Zealand and in Sydney, Australia.
I left New Zealand at the age of 20 to work for the Planet Hollywood chain, where I became a Bartender Trainer in the Sydney restaurant. After a year with the company I was selected to travel to Cape town, South Africa to open the new restaurant there. After setting up the 3 bars and training the 15 Bartenders, I decided that I really wanted to pursue a career in the restaurant business, and eventually have a place of my own.
After Cape Town, I made my way to London to further my career. This is where he linked up Giles, who was the General Manager at the TGI Fridays in Leicester Square. I worked at Fridays for 5 years, before heading over to the fine dining side of the business at Sir Terrence Conran’s Mezzo in SOHO and then on to Café de Paris. In both venues I learnt different styles of service and management, working in 2 of London’s premiere venues.
During my time at Café, I worked on the concept of the Snug with Giles and some time later the first Snug opened in Cambridge. |
